Chocolaterie les Gayettes

Established in Hennuyères, in the heart of Hainaut, the chocolaterie LES GAYETTES has for 35 years kept an artisanal know-how alive that is deeply rooted in the history of the Pays Noir. Inspired by the region's mining past, les Gayettes draw their black color from the coal to which they pay tribute. Behind this coal-black appearance hides a treat that has endured through the years without losing its character, becoming over time a true Walloon specialty.

Each Gayette is made from caramelized sugar, buttercream and milk chocolate. Its contrast between a thin crunchy shell and a melting center gives it a unique texture. Around this emblematic creation, the chocolaterie also devises numerous recipes: hazelnut praliné, speculoos, raspberry, coffee or bergamot, as well as squares scented with violet, pomegranate or lemon. Orangettes and gingembrettes complete this collection, crafted with the same care.

For four years, Nancy has also been sharing her love of indulgence through a range of artisanal ice creams, the Glaglayettes, inspired by the chocolaterie's specialty and other flavors prepared with the same exacting standards.

At Estivales 2026, visitors will be invited to discover much more than an assortment of chocolates. They will enter the world of a family chocolaterie where each creation tells a piece of history - that of a territory and its heritage.

Nancy and John will be pleased to share their craft, to tell the origin of the Gayettes and to introduce a range of artisanal specialties that combine tradition, indulgence and local identity.
